While there were some attempts to stockpile mentioned by characters before the flood, and while Pudding certainly took inventory at the time of the flood and began trying to help ration supplies, there was only so much left given that half the month had gone by and previous to the flood, characters would have had no reason to think they would need to eat all that much less in case of some future disaster.
The efforts of Pudding and others, plus the bonus growth at the Greenhouse and some extra food found at the lighthouse, all helped push what they had remaining through the entire month of May already without running out. Now we will be going into June, marking two whole months without a ferry shipment. There will certainly be some shortages toward the end of the month as that is an extremely long time to go without a resupply. Remember also that the characters do not necessarily know for sure yet if their efforts at the lab will work to bring in more food - this is very much a trial run.
Note also that "supplies" is not limited to food. The ferry brings items such as new clothing, cleaning products, paper products, construction supplies (such as nails and screws), and much more. Any of these things may also be dwindling by the end of June, especially given that the flood might have ruined them or swept some of them into the lake.
Ultimately, we are not micromanaging the exact quantities of supplies that are left. This is simply a survival-style gameplay option for those who wish to use it in threads.
